Fregate Island Private Welcomes New Executive Chef
Oetker Collection is proud to announce the appointment of Dale Lapperts as the new Executive Chef of Fregate Island Private, Seychelles.
Native from Cape Town, South Africa, Dale has trained and worked extensively at home in Cape Town at ‘Cape Grace Hotel’, then he moved to the UK in 2003 to pursue his passion for modern European food.
He believes in using locally sourced, seasonal produce and is also a keen searcher, particularly around the grounds and local areas. Thanks to the hydroponics plantation on the island itself, Dale has the opportunity to create a range of new unique culinary delights and dishes.
Further to his experience from his time in South Africa at Zevenwacht wine estate, he will now enhance his unity with nature using sustainable ingredients for a varied cuisine. Wayne Kafcsak, General Manager of Fregate Island Private, enthuses about Dale: “As soon as I started working with Dale, I saw his passion about cuisine, always choosing the best products and buying locally where possible. He is always keen to explain his creations to our clients and our staff – so we are all knowledgeable about what we are serving.”
Dale has gained an impressive, well-rounded experience of high quality, small and voluminous operations while he worked for luxury hotels such as Cape Grace and Cowley Manor, Rosette’s restaurants and for excellent brands such as Peyton & Byrne in a catering and retail capacity. Thanks to his amount of flexibility, he describes himself as someone who finds solutions to challenging situations.
