Try recreating their island-style mince pies, bursting with summer flavours, at home:
Ingredients:
For Sweet Pastry
250g butter
250g sugar
3 eggs
500g flour
For Filling
400g papaya cubed
400g mango cubed
50g vegetable atora
50ml brandy
50ml beer
10g all-spice
Directions:
For Pastry
Cream together butter and sugar, add your eggs and mix thoroughly. Sift in flour and mix until ingredients are combined. Place in cling film and refrigerate for 1 hour.
For Filling:
Place all ingredients into a large bowl and mix well. Let the mixture soak for 2 to 3 hours before use.
Assembly:
Line small ring moulds or a muffin tray with the pastry dough. Fill until ¾ way full.
Add a pastry lid and prick a few holes on top.
Bake at 180 degrees for about 25min.
